How is freezer burn caused?

Freezer burn is caused by dehydration and oxidation of frozen food. When water molecules in the food sublimate, they leave behind dry pockets, leading to a change in texture and flavor. Oxygen molecules in the freezer can also react with the food’s fats and proteins, causing discoloration and off-flavors.
